Joomla now has a Versions feature for its articles to keep updates/changes stored to history on the DB _ucm_content. I currently use Versions for my articles so I can compare the changes made to the articles for auditing purposes. Does the Kunena forum have a similar feature that saves the original posts/comments so that you can compare what was said before the post/comment was edited? I did not see any settings under the Kunena Forum Dashboard for this. If not, is there a plugin for this feature?

No, kunena does not have messages versions. There is also no plugin for that.

With that being said, would a user with moderator rights still be able to edit a post/comment if the User Edits field was set to NO? I did not see anything specific for this on the www.kunena.org/docs/Forum_moderators page. I assume moderators are just like a Super User...

Yes. The configuration setting only applies to the author—the "normal user"—of the messages. Forum moderators can edit any messages posted on the forum.
